Hope you enjoy these fluffy american style banana and oat pancakes. They are perfect for a filling breakfast, brunch or even as a dessert.

Serves: 1-2 (4 medium sized pancakes) Time: 10-15 minutes
1 banana, mashed
1 cup oat flour
1/2 cup milk of choice
1 egg, separated and egg white whisked to soft peaks
1/4 tsp salt
1/4 tsp baking powder
1 tsp vanilla extract.
1. Put all ingredients in a baking bowl apart from egg white and mix thoroughly.
2. Fold egg white into pancake mixture until well combined.
3. Lightly oil a non stick frying pan and heat under medium to low heat.
4. Ladle pancake mixture onto pan and cook until the pancake begins to bubble then turn over and cook for a further two minutes or until lightly browned on the bottom. Repeat until all pancake mixture is used up.
